Japanese Sencha is harvested using a unique technique. The tea leaves are picked early in the spring, usually in April, when they are still young and tender. This first picking results in a tea with a delicate, sweet flavor and a fresh, grassy aroma. The leaves are then steamed, rolled, and dried, resulting in a tightly twisted, needle-like shape.

The steaming process used in sencha production is what sets it apart from other green teas. Steaming helps to preserve the natural flavor and aroma of the tea, as well as its colour. This process also stops the fermentation process that occurs in other types of tea, which results in a more bitter flavour.

Sencha is known for its bright green color and smooth, vegetal flavor. It has a delicate sweetness with a hint of umami, the fifth taste sensation that is often described as savoury or brothy. Sencha is high in antioxidants, making it a healthy choice for tea drinkers.

Organic Sencha Green Tea

BREWING SUGGESTION
1 tsp/cup ~ 70ºC ~ 1-2 min

Place a teaspoon of tea per 240 ml cup into an infuser. Add filtered hot water and allow to infuse for 1 to 2 minutes. Do not boil the water. Strain the tea and serve.
